I know grilled Caesar salad was a bit of a thing a few years back, but it’s worth revisiting because it tastes so darned good. This classic salad is already a favourite for many of us and, really, what’s not to love? Crisp romaine. Creamy garlic dressing. Shards of Parmesan. Carby croutons. Wedges of lemon. And, bacon. Raise your hand if you eat Caesar salad as a mere vehicle for bacon. You’re one of my tribe.
The grilled version of this salad has all of these components, plus the romaine retains a lovely smokiness which comes with a minute or two on the grill. The leaves are charred a little, and there is the pleasant textural contrast of crisp and tender playing about on the plate. I like to leave the romaine leaves whole once they are grilled, but you could chop them up and toss the salad that way. For perhaps a prettier presentation, I prefer to arrange the grilled lettuce halves on a platter, drizzle with dressing and scatter the usual accoutrements on top. That’s just a fancy way of saying heap the salad up with Parm and bacon.
