San Antonio's December freeze caused considerable damage to vegetable gardens; here's what to expect
Many root vegetables had their tops frozen back but should regrow quickly. Carrots are already showing new growth, while beets, onions, turnips and rutabagas shouldn’t be too far behind.We had two February freezes to analyze, and now we have a December 2022 freeze to consider. The freeze during Christmas week was quite cold, reaching 17 degrees in San Antonio.
Most of the tops of the greens such as broccoli, cauliflower and lettuce were frozen back. The exceptions seem to be Brussels sprouts and cabbage. In many gardens, they will just continue their path toward harvest. For the broccoli and lettuce, most gardeners will have the choice of letting the plants recover from the base and roots or, in the case of broccoli, transplants are still available at most nurseries. Lettuce can be replanted by seed. Remember not to cover the lettuce seed with soil.
