Moisture is the enemy of browning. Blot both sides with paper towels, then season generously. A dry surface ensures a deep golden crust instead of steaming in the pan. Let the pan fully heat before adding the chops. Place your skillet over medium-high heat for several minutes, then add the oil. When the oil shimmers, add the pork. Resist moving it for the first few minutes — undisturbed contact creates proper caramelization and flavor. Finish the sauce off the heat with cold butter. Once your liquid has reduced to slightly syrupy, remove the pan from heat before adding the butter. Swirl in cold cubes gradually to emulsify. This creates a glossy, silky sauce instead of a greasy or broken one.Swap sparkling wine for dry white wine or additional chicken stock. Use honey or maple syrup in place of apricot jam for a slightly different sweetness. Add fresh thyme or rosemary to the sauce for an herbal note. Leave the potatoes unpeeled for a more rustic texture.
