Don't miss Emma's latest pick-me-up Big Little Recipe: a broccoli cheddar sauce with just two ingredients.

In This RecipeFill a very large pot with about 5 quarts water, then set on the stove over high heat to come to a boil. Add the 4 tablespoons salt.

When the water is boiling, add the broccoli, and cook for about 8 minutes. When it’s done, the broccoli should be bright green with tender-ish stalks. Use a slotted spoon or tongs to transfer the broccoli to a blender. After 2 to 3 minutes, once the pasta has released some of its starch , pull ⅔ cup water and add to the blender, along with the ½ cup grated cheddar.

When the pasta timer goes off, taste a noodle—it should be somewhere between toothsome and tender. Use a sieve or spider to transfer the pasta to a large serving bowl . Add the broccoli-cheddar sauce to the pasta and gently toss. Add small splashes of broccoli-pasta water to sight , until it reaches a thickness you like . Taste again and adjust the salt accordingly.

Instant Pot Coconut Shrimp Soup (Tom Kha) Recipe on Food52Instant Pot Coconut Shrimp Soup (Tom Kha) Recipe on Food52From Instant Pot Fast & Easy: 'This Thai-style soup is brothy, fragrant, and delicately flavored. While tom kha is typically made with chicken (in which case it’s known as tom kha gai), I like making it with shrimp as a change of pace. This soup reheats very well, and I find the flavors deepen over time. If you plan to serve it a day later, don’t add the shrimp until you’re just about ready to serve the soup. Instead, reheat the soup and add them for the last few minutes of cooking.'
