There are a few reasons for the closure, Kaiho said. Regarded as one of Dallas' top bartenders and mixologists, Kaiho was a fixture at West Dallas bar Jettison before leaving last October to work behind the bar atUnlike at Jettison, the drinks on Le PasSage’s cocktail list are not Kaiho’s own creations, so he’s channeling his recipe development skills into a monthly pop-up cocktail concept he plans to launch this year. He’s still sorting out the details, but the concept will focus on seasonality and Japanese flavors, he said.
