shortly after graduating from college and cooked in it nearly every night. As years passed, I assembled a larger collection, including a pretty 3½-quart Le Creuset that’s perfect for vegetable sides. I simmered pots of beans and chili and braised chicken thighs and lugged those heavy pots from stovetop to sink and back, and back again.
Some people find washing dishes to be meditative. But when you’re cooking three meals a day for a family at home and, the dishes seem to multiply behind your back. The morning tower of kid bowls and cups spawns a noontime dish metropolis, and soon it’s 10 p.m., and you’re in the suds for the foreseeable future. If you’re lucky enough to have a dishwasher in your kitchen, it might be time to adjust the tools you’re using to make your life a little easier. At least for a while, I’m ditching the pretty Dutch oven and almost anything else that needs to be washed by hand. While a lot of enamel-coated cast-iron cookware is actuallydishwasher safe, handwashing is recommended to keep those pieces looking nice. These days I leave the Lodge in the cupboard and use a sturdy All-Clad stainless-steel pot that I scored as an open-box deal on eBay. Is it exactly the same as cooking low and slow in a thick iron pot? No. Does it help me get through the day with a little less friction and free me up to join my child’s elaborate bedtime process?
