Dishes will include saffron tagliatelle with Gulf shrimp, Gulf striped bass with smoked oyster ragout and a roast chicken brined in Texas ale. The program is led by Food and Beverage Director Michael Moore, whose resume includes the Alamo City’s Luce Ristorante e Enoteca and the Grand Hyatt San Antonio. Executive chef Adam Gilly brings 30 years of experience to the kitchen plus a philosophy rooted in Texas-sourced ingredients and French technique. “The Faust Hotel is an iconic part of New Braunfels’ history,” Moore said in statement. “We can’t wait for our spaces to become a hub for the city once more.” Beyond the main dining room, the Faust is leaning into variety. The Prince Solms Lobby Bar and refreshed Magnolia Patio will offer more casual fare.
