Customers can choose their noodle packs, toppings, and beverages, then prepare their ramen at one of five self-service machines.

“We wanted to make that distinction because we see how audiences kind of respond to ramen and immediately your thought is going to be that Japanese-like ramen that you see at restaurants,” said Calyx Ryu, daughter of the owners and manager of the café, told NJ Advance Media.So, how exactly does self-serve ramen work? I followed the instructions on top of the machine, which were simple and self-explanatory. I placed the pot on the small induction burner, pressed a button for water, and waited for the water to boil. The process varies depending on whether the noodle pack is soup-based or stir-fried.
“My family grew up on this food. All the types you see here are childhood comfort foods for us, as well as for my parents. So this goes way beyond just our generation,” said Ryu. “They’ve been here for a long time and have seen the changes in our culture regarding Asian American food. It went from ‘What is that stinky food?’ to ‘What is that? Can I have some?’”Ryu went on to explain that her parents knew that people would be looking for something quick when they got back from work or school.
