Trip to historic home of Mexico’s national dish yields a recipe ripe with authenticity
The first word that comes to mind when people think of Mexican cuisine is probably “taco,” and for good reason. But the great glory of Mexican cuisine is mole. Simply put, mole is Mexico’s national dish.comes from “mulli,” meaning “sauce” in the Aztec language, Náhuatl. Whether mole originated with the Aztecs is unclear. Moles have found homes in Oaxaca, south of Mexico’s capital, as well as Puebla, southeast of Mexico City.
