Liberally spray a Bundt pan with non-stick cooking spray and sprinkle the inside of the pan with sugar. In a large mixing bowl, whisk together the eggs, ricotta, and sour cream. Add the olive oil and vanilla and mix until well blended. Whisk in the sugar, baking powder, salt, and orange zest until very well combined. Then, gently fold in the flour, just until incorporated. Do not overmix!
Pour the batter into the prepared pan and smooth the top. Bake until the cake is golden brown, and a skewer inserted into the center comes out clean, about 45 minutes. Transfer the cake to a wire rack and let the cake cool in the pan for at least 1 hour before unmolding and slicing.
