Twenty Tap, a pub just south of Broad Ripple, offers simple, great fries with homemade sauces.
The secret to Twenty Tap's french fries is in the execution. IndyStar's Rory Appleton has named them the city's best fries.French fries should fight back a little before meeting their inevitable demise. They need a little bit of crunch on the way down, but not enough to crack a tooth.
The fries come with a flight of house-made sauces, from curried ketchup to vegan tzatziki to a garlic aioli. And if one deep-fried basket doesn't fill you, the potatoes pair excellently with Twenty Tap's well-known cheese curds. The fries weren't blessed as potatoes in a local field or painstakingly sliced by hand. They come from a bag that was once in a freezer, from a brand so forgettable that Kurker could not recall the name.Pana rises to top of crowded Indianapolis donut scene with five area locations"We hand cut our fries for the first month, but there is just no space in our kitchen for it," Kurker said.The cheese curds are battered and fried to order.
Matalucci brews some of Twenty Tap's beer from a small setup in the bar's basement. He built nearly everything in the restaurant's front-of-house, including the tables, booths and bar, Kurker said.
