Pick out the seeds from the cardamom pods. Then add, the fenugreek, cumin seeds, turmeric, cayenne, garlic and ginger and grind in a pestle and mortar until you have a smooth paste.
2. In a bowl, combine the paste, cinnamon sticks, yogurt, chicken and some seasoning and set aside to marinate in the fridge for a minimum of 30 minutes. 3. Melt the butter in a large frying pan and fry the onion for around 10 minutes until golden. Then add the chicken mixture, tomatoes, tomato puree and cream. Bring to the boil and simmer for 15 minutes until the chicken is cooked through and the sauce begins to thicken.5. Preheat the oven to 180 degrees . Remove the cinnamon sticks from the curry, stir through the spinach and spoon into a casserole dish – remember to check for seasoning.
