Meet Jordan Jent, head farmer of Arlington’s Texas Fungus, which supplies some of Dallas’ best restaurants with mushrooms.

Jent hasn’t always wanted to be a mushroom farmer. How about the cordyceps? Those are an alien-looking but matchstick-size growth, a small but dastardly fungus that looks somewhere in between Cheetos and zombie fingers . Then there are the shrooms going to Salum, the Mansion on Turtle Creek, Oddfellows, Khao Noodle Shop and Gemma. Central Market and Eataly, as well as the restaurant inside Eataly, Terra, is also a pitstop on Texas Fungus’ bulk delivery route. An average small farm grows nearly a million pounds of harvestable mushrooms a week — Texas Fungus focuses its supply to around 1,000 pounds.
Despite the pandemic and deep freezes, Arlington’s Texas Fungus is feeling the sunshine of good fortune.2022 will be an important year for cottage mushroom farms. With big mushroom farms strapped for workers, the smaller, scrappier joints are able to pick up a sword. Hyperlocal agriculture, with all its homegrown quirks like, say, freshness, quality and price-point, might find itself suddenly standing center stage.
