From sushi to Michelin stars, the cuisine has found a home in the ski resorts of Switzerland
Switzerland is known for many gourmet specialties, ranging from cheese to chocolate. Both are best enjoyed amid the country’s soaring Alpine landscapes, perhaps after a day well spent navigating its iconic slopes. Yet, one of the latest trends found across the country’s many luxury mountain retreats is the increasing prevalence of Japanese fine dining.
Sushi and sashimi are abundant on the menu, along with signature dishes such as wagyu tataki, donburi bowls, hot pots, and tamagoyaki, or rolled Japanese omelets, topped with an Alpine-sized mound of fresh grated truffles. Dishes may be paired with a complementary drinks program, including a deep selection of sake, along with Japanese whisky and cocktails incorporating Japanese flavors and techniques.
“The restaurant brought a completely new style of Japanese cuisine to St. Moritz,” says Thomas Citterio, the hotel’s director of sales and marketing. Andermatt is a reemerging ski resort that would love to one day be as renowned as a destination such as St. Moritz, and the Chedi Andermatt hotel is out to stake such a claim. “Chedi” can be translated from Thai as a Buddhist temple or stupa, and the hotel’s entire concept is an Asian-Alpine blend, drawing on elements from both spheres while delivering a traditional Swiss mountain chalet style experience.
The restaurant has risen to great heights since, garnering a second Michelin star this year. The acclaim is nearly as soaring as the restaurant itself: It’s housed in a separate mountaintop enclave, at an elevation of more than 7,500 feet. “Guests can either ski in and ski out or hike in and hike out,” Chng-Lüchau says. From that vantage point, diners at the Japanese enjoy spectacular views including the Andermatt mountains, the Oberalp Pass, and Urseren Valley.
