Hi, my name is Denise Evans and I am a battered fish convert after more than three decades hating it.
Rabs has a packed menu with your classic battered fish, homemade pakoras, traditional pies sourced from an artisan bakery in Rochdale, sausages and of course chips. But it's the 'seven fishes of the world' section of the menu that makes it more killer whale than goldfish in the highly-competitive chippy universe, where you can't drive a mile without passing at least two chips shops in any English town.
From the batter to the special recipe chip oil, which somehow manages to create a beef dripping taste but is completely meat-free. For this dish, the fish is prepared and coated with the signature batter and fried, once ready it is smothered with Rabs' fragrant Thai blend topped off with Thai chillies, spring onions, coriander and a slice of lime.
It had the zip and sweetness of a citrus fruit on my tongue then the spices of the fresh chilli slices forced their way through, leaving my lips tingly and warm, like a soothing hot water bottle on your skin in the winter. I completely forgot I was eating batter because the sauce's flavour was such a welcome shock. It was a cross between sriracha and sweet chilli.
