I convinced my coworkers to order takeout from the shop so I could get it. I went out of my way to stop by and pick it up for dinner a few nights in a row. I was hooked.Cut the neck of a butternut squash into planks, then trim the body into 1/4-inch pieces to create slabs perfect for sandwich layering.
While the squash was roasting, I threw together some quick pickled red onions and an easy spread of Dijon and mayonnaise. I perked up the Dijon mix by adding in garlic and thyme that I had roasted with the squash. White cheddar slices and arugula added heft and a peppery bite.
