While the butter is heating, place the slices of cheese between the two pieces of bread. For extra tang and crispiness, spread a thin layer of mayonnaise on the outside of the two pieces of bread. Some find this an to a delicious grilled cheese, but you can always stick to Cunningham's classic method, which just calls for butter sizzling in the pan.When your butter is lightly bubbling, place the sandwich in skillet with a spatula. Use the spatula to press down on the sandwich a couple of times during cooking to help make the cheese melt and turn the bread crispy. Check the sandwich by lightly lifting it with the spatula.
And, really these are only the beginnings of the variations you can do on this classic grilled cheese formula. Sandwich whatever ingredients you like in there: spread on some jam, or some cream cheese. Put a fried egg on top. Add in some fruit, like apples or pears. Go ahead and use some super fancy, delicious cheese like fontina every once in a while. (Just make sure it's a melty cheese.
