Using a plastic bench scraper, scrape the bowl to make sure there are no dry spots and mix once for 1 minute to fully incorporate.Pick up and fold the dough onto itself and do this two times. Wrap bowl tightly in plastic. Set a 30-minute timer.

Place pizza stone or overturned baking sheet in oven and charge with heat for at least 15 minutes.Stretch pizza dough to a 12-inch circle.Spread provolone, mozzarella and pepperoni on top of crust.Whip the heavy cream in a tabletop mixer on medium speed until the cream reaches medium-stiff peaks.Return the mixer to medium speed and whip until it reaches stiff peaks. Do not overwhip or cream will turn into butter.
