These zesty shortbread slices are perfect for a sophisticated afternoon tea or as a light dessert.

Preheat oven to 180° C. In a large bowl, combine the butter, sugar, salt and flour for the base and work it with your hands until you get the texture of wet sand. Add the thyme and press the dough into a deep baking dish lined with baking paper.

Prick the dough with a fork and bake for 20 mins. Once cooked through and lightly browned, remove and allow to cool. In another bowl, combine the eggs, sugar and lemon juice for the filling. Pour the mixture over the shortbread base and place in the oven again to bake for 45 mins. Reduce the temperature to 150° C.
