How to feed them all? Barbecue. German immigrants – including many butchers – had settled in the area and harnessed the local cattle industry to open meat markets.

“During the harvest season, gas stations, beer halls and anybody with a smoker got into the barbecue business. Taylor, a cotton shipping center, had a high concentration of barbecue joints,” wrote Robb Walsh in the"Legends of Texas Barbecue Cookbook." By the early 1950s, advertisements in the same newspaper noted the Louie Mueller Complete Food Store featured “Barbecue, hot sausage, cheeses, spreads.”

On a recent visit, I sat down with a tray of exquisite Central Texas-style barbecue and chatted with Mueller. The talk of the town had transitioned from its history as a center of cotton culture to a future of semiconductors.
