With consistently less snow and higher temperatures, sugar making season in New Hampshire is earlier and shorter.

“It's not the same quality that I would have selling as table grade,” he said. Babel thinks his syrup yield this year will only be half of last year's. Popular wisdom around maple syrup production says that sugar makers need “warm days and cold nights,” and the science backs this up: A cycle of freezes and thaws help the sap run down the trees and into the syrup taps.
