For Thanksgiving this year I cooked 17 complete dishes, not counting their component parts, which included prepping several batches of pie dough, a pint container of brown butter, and a mountain of freshly whipped Italian meringue. Believe me, I do not mention any of this as a humblebrag. I am an idiot and I’m exhausted down to my marrow. For my holiday snack spread this year, I’m serving this peppery goat cheese with crackers and maybe some cornichons or pickled beets on the side if I’m feeling extra crazy. Flavorwise, horsey goat is equal parts smooth and—dare I say it—a little sleazy? I’m talking early-John-Waters-movie, surf-rock-saxophone, making-out-with-a-stranger-with-white-wine-breath sleazy. The peppery horseradish puts some punch in your nostrils; it threatens to make you cry a teensy bit.
