. Seeing those desserts on Instagram from halfway across the country in Portland, Oregon, I began to wonder what all went into these magic shells. Can you “magic shell” anything? Aside from being incredible, what do Cap’n Crunch and Cheetos have in common?
As it turns out, magic shells—like many kitchen tricks—look more impressive than they are hard to pull off. The sauces that turn to a hard shell when poured over ice cream work because of their large proportion of cocoa butter or alternative fat that’s solid at room temperature. Cocoa butter is simply the fat extracted from cocoa beans and it’s what makes chocolate solid at room temperature. It also helps to mellow the bitterness of chocolate and carries its own subtle chocolaty flavor.
In essence, chocolate bars—and chocolate magic shells—are cocoa powder suspended in a fat that turns solid at room temperature, like cocoa butter or coconut oil. The ratio between the two can be tweaked a bit to make a sauce that’s liquid at room temperature but still quickly sets when it hits cold ice cream. This recipe takes that same principle and applies it to fortune cookies.
Unlike cocoa powder, fortune cookies retain a crumbly texture regardless of how fine you blend them. This works to our advantage here, giving a varied texture somewhat like a Hershey’s Cookies ‘n’ Cream candy bar. The coconut oil base is lighter than cocoa butter, too, so it doesn’t cloud the perfectly bronzed, sweet toasty notes of the cookies.
