Nachos made on the grill? Yes, please!
In a large mixing bowl, using a fork, mix together the olive oil, salt, cumin, chile powder, tomato paste, oregano and cayenne until thoroughly mixed. Add the chicken thigh and toss until the thighs are well coated in the spice mixture. Let marinate for at least an hour or up to 12.
Preheat grill to high. Once hot, add the chicken to the grill and cook for 4-6 minutes per side or until cooked. Remove the chicken to a plate and let rest for 10 minutes. Turn the grill heat down to medium. Once the chicken has rested, chop the chicken into 1/2-inch pieces. Set aside. Tear off four big square piece of aluminum foil. Place about two cups of tortillas chips in the center of a sheet of foil. Top the chips with ¼ of the Monterey Jack cheese, ¼ of the chopped chicken and then ¼ of the cheddar cheese. To seal the packets, bring two sides of the foil together over top of the nachos and roll them together to create a seal. Roll up the open sides of foil packets to seal together all the edges.
Place the foil packets onto the grill and let cook for 8-10 minutes or until cheese melts . When ready, remove from the grill, carefully open the packets and top with your favorite toppings.

Grilled Young Carrots with Pickled Mustard Seed Dressing and Arugula Recipe on Food52When you start with freshly harvested, young carrots (preferably from your local farmer’s market) there’s no need to peel their thin skin. For a burst of color, use a variety of carrots (such as golden or red varieties), if available. Because Pickled Mustard Seeds can be prepared well in advance (you’ll love having leftovers to perk up vinaigrettes, or to toss with grilled green beans, potatoes, or roasted beets), this dish comes together quickly. You can grill the carrots up to 2 hours in advance (they’re delicious at room temperature), but for the best texture place them on the arugula and add the dressing just before serving. To add more richness, top the carrots with shaved aged cheese like ricotta salata or Parmesan.

No-Mayo Peperonata Pasta Salad Recipe on Food52Want to know how to change hearts and minds about pasta salad? Make this one for your next backyard BBQ or picnic with friends. Peperonata—the classic Southern Italian side dish of sweet peppers, onions, and tomatoes melted in olive oil—is a swell companion to pasta. It’s packed full of vegetables and serves as the dressing (a win for pasta salad, a big win for you). My peperonata borrows elements from two recipes: a generous heap of capers from Suzanne Goin’s version in Sunday Suppers at Lucques and cherry tomatoes added off the heat from Joshua McFadden’s take in Six Seasons. Better yet, the peperonata can be made several days in advance and tossed with freshly-cooked pasta whenever you’re ready. Creamy mozzarella, shaved Parmesan, slivered almonds, and loads of basil keep each bite interesting. Serve it as a main course, or pair it with grilled meat. Italian sausage and cold beer are smashing accompaniments.

Seekh Kebabs (Pakistani Spicy Grilled Ground Meat Skewers) RecipeWhen a Pakistani friend of mine in college introduced me to the little packets of pre-blended seekh kebab spices at our local Indian market, it was something of a revelation. Oh, this is what a balanced spice blend tastes like. These days, though, I like to up the ante and cook seekh kebabs up from scratch, using a homemade mixture of spices.
