My friend Paige's aunt Alma makes the best green chile chicken enchiladas in the world. She lives in Hatch, New Mexico, in the heart of the valley where the famous Hatch green chiles are grown. I'm lucky enough to get to spend a few days at her home each fall, putting up chiles to make red enchilada sauce.
Over the years, she's taught me a lot about New Mexico cuisine. To properly make pinto beans, you need a dedicated bean pot and salt pork. The secret to the best burritos is Spam, and if you want good enchiladas, you need fresh tortillas fried in good, old-fashioned lard. My recipe for green chile chicken enchiladas isn't exactly like Alma's — I take a few shortcuts. But, for skipping a few steps, it's pretty close. And for me, it gets the job done until I can make it back to Hatch for the best in the world. I love that this can be made ahead. Make it in a 9- by 13-inch dish to serve a crowd or make it in two 8- by 8-inch dishes, so you can bake one now and freeze the other for later. It's hard to beat a comforting, creamy chicken casserole. Always a hit this time of year!Make the filling ahead and freeze it. Thaw filling and assemble for easy meal prep. Fully assembled casserole can also be frozen, then thawed and baked.Leave out the chicken to make this vegetarian. Swap the green chiles for jarred diced red pimientos for a milder pepper flavor.
