Gozney has launched a new pizza oven in its line, the Arc. It is available in a 14-inch or 16-inch size as the Arc XL. I got a chance to try the new oven, and I love how quickly it churns out high quality pies. Read more about my thoughts here.
I grew up in northern New Jersey, and now spend half of my time in Brooklyn, New York, which is all to say this: I’ve eaten more than my fair share of pizza. Over the years, I’ve made it a mission to try, some of my favorites being Ops in Bushwick and Razza in Jersey City. I’m no pizza-snob, but I can confidently tell you that I know what good pizza is and what it tastes like. I can also confidently tell you that up until last week, I had truly never made a good pizza at home.
The Arc is not as large and pricey as the Dome, and has a bit more permanence compared to the Roccbox. The oven measures 14.8 wide by 18.1 in depth by 6.8 inches tall, and weighs around 50 pounds. It has the same rounded shape and wide opening as the Dome , but is much more compact. It looks beautiful on my deck, doesn’t take up the entire space, and can still churn out pizzas as wide as 14-inches.
Well, sort of. Just before I set out to make pizza, I realized that the brand recommends curing the oven — heating it for 30 minutes on low — to protect and prepare the pizza oven as it heats to very high temperatures when cooking your pizza. This is done before you heat it for your first pizza, and whenever the oven has been dormant for a while to re-prepare it. Luckily, it was super simple to do, and the 30 minutes went by fast. And then I was ready to make pizza.
There are two initial downsides I’ve discovered that are worth keeping in mind: lighting the oven can be tricky and it’s difficult to use the oven if it's windy. Each time I’ve used it, I have found that the flame doesn't instantly catch. It has taken a few minutes of trying, though I’ve always gotten it to light. The brand gives you a metal match holder, that way you can manually light the oven if you need to. Additionally, this oven will not hold a flame if it's windy out.
