We love a good summery fruit tart.
This recipe was fine, but not a notable improvement over a classic fruit tart. While my crust turned out fine, and not weak or sandy as others commented, it wasn't especially flavorful. I think a classic shortcrust tart crust and the addition of almond extract, instead of vanilla, to the custard, would be better. The custard came out nicely, but I think it would have been even better with scant 1/4 c. corn starch.
I agree that the crust tends to get too brown and would cook 25-30 minutes instead of 30-35. I Increased the quantity of fresh berries and gently pressed them into the custard to control them when serving. This brought the filling/fruit up to the Increased 2” level of the crust. Yum!Made this for our household's 4th celebration, arranging the fruit to look like a firework. Delicious! Flavors are great, I think the custard is perfect , and the crust is magnificent.
