San Antonio-based Project Pollo announced last month that it was closing most of its restaurants due to an acquisition by a Detroit-based franchise group.

Though it is growing, the plant-based sector is also niche.
Project Pollo closed locations in areas such as Alamo Ranch, Stone Oak, Katy and Round Rock along with its flagship food truck at Roadmap. More recently, high inflation meant Project Pollo’s costs were rising and potential customers were pulling back on their spending, Bradbury said. The news was met with anger and disappointment by some customers who commented on the company's social media posts, saying Bradbury and Project Pollo were selling out and mourned having fewer vegan options in comments. They also complained about a flurry of location and menu changes, including Project Pollo’s launch of its Side Chicks concept with real chicken earlier this year.
