DeLucca founders Evandro Caregnato and Dede Mallmann weren’t exactly looking to sell the tableside pizza restaurant when they opened the first one in Southlake in 2018 in a former CiCi’s Pizza. DeLucca is a rodízio, a style of Brazilian buffet, where diners pay a fixed price at dinnertime and get endless appetizers — salad, lobster bisque and meatballs — followed by pizza slices, continuously delivered, until diners are full. Kids under 3 eat free.
“We visited the restaurant and thought, ‘Man, this is great. How am I going to compete with this?’” Smith says. He liked the operation and found it unique.Indeed, an upscale rodízio-style pizza restaurant does not exist elsewhere in Dallas-Fort Worth. Smith and Miller saw a franchise opportunity, especially since they’ve had years of chain-restaurant experience.
They struck a deal with husband-wife team Caregnato and Mallman, and the restaurants sold on Dec. 14, 2022. By 2023, Caregnato was already back with a new restaurant idea: athat’s expected to open in a few months on Northwest Highway in Dallas. He also added brunch on Sundays from noon to 3 p.m. The format is the same: endless food, but with new brunch pizzas that include smoked salmon with pesto, goat cheese with capers, and a Croque Madame version with brie, Swiss, ham, eggs and basil.
New DeLucca leases are already signed in Las Colinas, near State Highway 114 and the George Bush Turnpike, and in Fort Worth’s rapidly growing Alliance Town Center. (Also over there:
