These Cumberland County restaurants were found to have violated Pennsylvania’s health and safety regulations between the dates of Aug. 12-18, 2024.

The following Cumberland County restaurants were found to have violated Pennsylvania’s health and safety regulations between the dates of Aug. 12-18, 2024.

Observed no food ingredient storage containers, bottles, and shakers, in the kitchen area, is not labeled with the common name of the food. Observed numerous food items in all cooling units and the facility, and being held for more than 24 hours, is not dated marked with the date it was opened or made.

The food facility does not have the original certificate for the certified food employee posted in public view. Observed the following foods, a refrigerated and ambient, ready to eat time temperature control for safety food in the pizza area and the walk-in cooer, was date-marked by the facility, but was beyond the 7 day use or sell by date and requires discarding: BBQ Sauce dated use by 08/13/2024/10:08 PM Buffalo Sauce dated use by 08/13/2024/10:08 PM Pepperoni dated use by 08/12/2024/2:43 PM Burger Sauce dated use by 08/13/2024/2:43 PM Icing cups dated use by 08/13/2024/10:09 PM Crumbled beef dated...

Observed single-service, single-use bread stick trays stored under the shelf, on top of a case of the same, next to the pizza area which were not in the original protective package or inverted to protect against contamination. Containers were observed with a a heavy layer of flour on them. A food employee was observed touching toasted bread - a ready to eat food - with bare hands. Gloves were not readily available for employee to use. Educated and corrected on sight.

Observed interior of ice cream freezer with heavy rust on the entire interior and in need of repair or replacement. Observed walk in freezer door does not shut correctly or stay completely shut and is in need of repair. The handwash sink on the cook line is being used as a food preparation sink as evidenced by observed brown and pink mold-like slime and food residue in the sink.

Old unused equipment stored through-out the entire facility, should be removed from food facility. Observed numorous pieces of equipment from utensils to large mixers with food debris on them. Food facility does not have available sanitizer test strips or test kit to determine appropriate sanitizer concentration. Test strips on site were expired in 2018 and unopened.Observed interior surface of numerous refrigerators cracked and repaired with tape, an unapproved material for food equipment.

Observed clean food equipment and utensils in kitchen and prep area, stored uncovered or not inverted. Observed working containers of chemical cleaner / sanitizer stored above and on the same shelf with food equipment, and single service articles in the kitchen area. Corrected on site.The Person in Charge did not demonstrate adequate knowledge of food safety in this food facility as evidenced by this non-compliant inspection.
