Funches said he remembers his mother cooking four or five times a day making delicious, intricate meals for the whole family. About two months ago, Funches said a woman came to the cafeteria multiple times a day while her husband was in the intensive care unit. Through conversation and food, Funches said he was able to make her feel better during a difficult time. Originally, Funches said he wanted to use pork with the bone, but his boss recommended pork tenderloin. The first time he made the sandwich for his boss, he brought him two: one with spicy mayonnaise and one with regular mayonnaise.
On the first day the sandwich was on the menu, about three months ago, Funches said he prepared 85 sandwiches at about 11:30 a.m. By 1:30 p.m., only 20 sandwiches were left, he said.George Funches created a pork sandwich with spicy mayonnaise, grilled red onion and American cheese as a cook at Silver Cross Hospital in New Lenox.
