Colorado 's craft beer scene is facing a challenging period, with rising costs and a decline in demand. However, a trio of local brewers, Jacob Sabo, Allie Hieber, and Mike Laughman, believe they've found a solution: collaboration. Their new concept, Cheetah Coalition, aims to provide aspiring brewers with access to shared resources, equipment, and expertise, helping them launch their own brands at a lower cost.

The initiative, launched from Hieber's existing GoldSpot brewery in Denver, offers a unique model for supporting the craft beer industry. Sabo, the former head brewer at Briar Common, observes that the traditional approach of opening a brewery, which often requires significant financial investment and resources, is becoming increasingly difficult. He states, 'There seems to be this mentality that all you need is Edison lighting, reclaimed wood and a warehouse in some obscure part of town. And if they put the word craft above the door, then people will come out in droves,' he said. 'But in reality, that’s not going to happen anymore.' Cheetah Coalition addresses this challenge by pooling resources and knowledge, allowing brewers to share equipment, ingredients, and expertise. Sabo explains, 'Say you need to make a stout and someone else needs to make a sour and another needs to make an IPA, and, hell, I’m brewing Kentucky Common. So here’s how we can divvy this up to brew,' Sabo said as an example. 'And boom, we all just saved $300 per batch.' The concept draws inspiration from similar incubator models in major cities like Chicago and Milwaukee, both known as Pilot Project. These initiatives provide support and guidance to aspiring brewers, helping them navigate the complexities of starting and running a brewery. Cheetah Coalition's long-term plan includes opening a dedicated facility and taproom in Denver's Sunnyside neighborhood. This new location will offer a larger space, improved infrastructure, and a platform to showcase the diverse range of beers produced under the Cheetah Coalition umbrella. Hieber, who has been managing GoldSpot for the past four years, acknowledges that the current space has limitations. She states, 'I have been paying for the potential of this location since the beginning,' she said. The move to Sunnyside will allow Cheetah Coalition to expand its operations and cater to the growing demand for innovative and collaborative craft beer experiences. The initiative also promotes a sense of community and shared ownership within the industry. Each participating brewer will have an equal stake in the Cheetah Coalition, fostering a culture of collaboration and mutual support. The pricing model for the shared space will be flexible and transparent, taking into account factors such as production costs, experience, and individual contributions. While Cheetah Coalition faces initial challenges in securing financing due to its innovative nature, the team remains optimistic about the long-term prospects. Their focus is on generating consistent cash flow through existing operations and building a strong foundation for sustainable growth.
