Chef returns to hometown, gets chance to open restaurant in Vilano
Ellie Rose Schultze hasn't been able to open her new restaurant in St. Johns County as quickly as she wanted, but she's willing to take the time needed to make it right.Schultze will open the Vilano Main Street Diner at some point in the coming months, adding a breakfast/lunch option at 140 Vilano Road, next to the new Holiday Inn Express.She was able to swing a deal with Farid Ashdji, who is the hotel developer and property owner.
"I got to see everything from food cost to recipe development ... but it was already in a turnkey kitchen," she said."This is all very new." She's taken advantage of the opportunity to work in different restaurants in the area, including Preserved and Serenata Beach Club."A lot of kitchens are having a hard time getting staff right now, so I have been able to go to places that I want to work and say, 'Hey do you need help,'" she said."I’ve decided that this whole year of getting ready to open is about getting myself into the community.
All of her plans will ultimately depend on how she can navigate a path through the current environment of high food costs and a limited labor pool.
