Make the pickled onions: In a small saucepan, combine the vinegar, sugar, and salt and bring to a boil. Remove from the heat and stir in the onions. Set aside.

Make the poblano salsa: Set the poblano pepper directly on the grates of the stove over a medium-high flame. Cook until charred on all sides, about 8 minutes. If your tomatillos can sit on the grates, cook them in the same manner for about 4 minutes. If they are too small, you can hold them with tongs directly over the fire until charred and slightly softened.

Transfer the poblano pepper and tomatillos to a cutting board and let cool. Use a paper towel to rub along the poblano and remove all the charred skin. Discard the seeds and chop finely. Chop the tomatillos finely. Combine the poblano, tomatillos, cilantro, oil, pickling liquid from the onions, and season to taste with salt and pepper.

Form the beef into 8 loose patties. Season well with salt and pepper on both sides. Heat a cast-iron skillet to medium-high until hot. Add a small amount of oil to the pan. Cook 4 of the burgers, pressing down with a spatula to create a thin burger with jagged edges, until browned on one side, about 2 minutes. Flip the burgers, press down again with the spatula, cover with a slice of cheese and cook until medium-rare, another 2 minutes. Transfer to a plate and cover loosely with foil.

Bow Tie Pasta Salad with No-Cook Tomato Sauce Recipe on Food52Bow Tie Pasta Salad with No-Cook Tomato Sauce Recipe on Food52When you have time but no energy, make a largely hands-off tomato sauce that takes only patience: For Michael Guérard's Genius Sauce Vierge, all you have to do is chop some tomatoes, smash a couple garlic cloves, snip herbs, douse with olive oil and lemon juice, and wait. When the tomatoes have turned to sauce, boil the pasta, toast the pine nuts, and slice the mozzarella. Mix it all together, add more basil and a splash of red wine vinegar, and you've got the flavors of a margarita pizza, pasta salad-style. This salad is also a good home for cubed or shredded roasted or poached chicken and—bonus—will get even better over time. You'll want to adjust the quantities of mozzarella, tomato sauce, and basil to your own linking—this is just a guideline.

Grilled Flank Steak with Cherry Tomato Vinaigrette Recipe on Food52Grilled Flank Steak with Cherry Tomato Vinaigrette Recipe on Food52I always had flank steak growing up -- it may have been our most-eaten red meat. It has a delicious flavor but can be a bit on the lean side, so I thought this recipe would be a good way to add a little richness and balance with a sweet and acidic tomato sauce. Roasting the cherry tomatoes and shallots makes them sweet, which complements the tartness of the sherry vinegar in the sauce. The tomato vinaigrette is good over any grilled meat, and I also serve the flank steak over truffled polenta truffled polenta or smashed potatoes. This recipe will make enough vinaigrette to suit a steak that's larger than 1 to 2 pounds.
