About 6 cups fresh tender spinach or mixed greens, washed and thoroughly driedOptional additions: soft-boiled egg; croutons; roasted vegetables; roasted/grilled fish or chicken; seared blackened tofu2 tablespoons minced shallot or spring onionSalt and freshly-ground black pepper, to taste1/4 to 1/3 cup good-quality extra-virgin olive oil, plus more for garnish• Add strawberries to a small mixing bowl and mash with a fork or use a mortar and pestle.
