A Cambria County woman won a blue ribbon Saturday in the Homemade Chocolate Cake Contest at the Pennsylvania Farm Show . The contest was held on opening day at the Pennsylvania Farm Show Complex & Expo Center in Harrisburg, which runs through Jan. 11. Judges evaluated cakes on taste, presentation, consistency and other metrics. Baking contests are an annual tradition at the Farm Show and include apple pies and angel food cakes. Contestants compete at county and community fairs to become eligible to compete on the statewide level at the Farm Show.Preheat oven to 350 degrees. Grease three 8-inch round cake pans lined with parchment paper. Sift flour, sugar, cocoa, baking soda, baking powder and salt into bowl of an electric mixer with paddle attachment. Mix on low speed until combined. In another bowl, whisk buttermilk, oil, eggs and vanilla. With mixer on low speed, slowly add wet ingredients to the dry until combined. Add coffee and just stir until combined, scraping down bowl with a spatula. Pour batter into prepared pans and bake 30-40 minutes, until cake tester comes out clean. Cool in pans for 30 minutes, then turn them onto a cooling rack to cool completely.Stir all ingredients together in a non-stick saucepan. Bring to a gentle simmer for 5 minutes. Cool to room temperature and refrigerate until ready to use.Beat butter until light and fluffy using an electric mixer. Sift in powdered sugar and cocoa powder. Add salt and vanilla. Beat low to medium speed adding heavy cream 1 tablespoon at a time until desired consistency is reached. Scrape down sides of bowl.Heat cream in saucepan until it begins to bubble.
