A new fast-casual sushi restaurant in Burlingame is selling sushi bites in an unconventional choose-your-own format.

Their concept allows customers to customize their own sushi bento boxes. It’s like picking your favorites in a candy store, except instead of chocolate, it’s fresh, colorful sushi bites. Pieces are $2.35 to $3.25 each. “The build-your-own box was inspired by the idea of giving customers flexibility and control over their meals while keeping the quality and presentation of Japanese cuisine,” says Anne Li, one of the restaurant’s owners. “So far, it’s been very well received.”The restaurant’s specialty sushi rolls and pressed sushi are among the menu highlights, Li says. Look for specialty bites like the Scarlet Wave, featuring seared salmon, spicy tuna, tobiko and crispy onions, or the Kaisen Roll, featuring lobster, shrimp tempura, avocado, cucumber and bonito. Meanwhile, the pressed sushi comes in salmon, mackerel and spicy tuna options. Bento boxes are also available , and to drink, beverages include creative flavor blends like mango matcha latte and shiso orange yuzu-nade .
