Cote was also doing consulting in Kazakhstan for a company, and the company would not work with farms smaller than 100,000 acres. By comparison, his family’s farm in Leask was 5,000 acres. “We knew how to grow grain really well, that was our skill set. From grain, you can make whiskey and that’s what the focus was going to be. But in order to make good whiskey, you end up with a byproduct that you don’t know what to do with, and that’s what we utilize to make our gin,” Cote says.

As Cote explains, they think about what they grow on their land that they can use in their product, such as the six acres of raspberry plants chosen because of their rich flavour, or their haskap, calendula flowers or cucumber. By controlling the ingredients that go into the product, you can control the quality, Cote says.“What we definitely have control over is the farming practices that we use,” she says.

Echlin sees Stefanyshyn-Cote and Cote as being great stewards in the community, which includes donating their time and mentoring others.
