“Everything we make here has some form of egg in it,” he said. “We use a lot of our recipes, we use whole fresh eggs. We also use whole frozen eggs, sugared egg yolks and egg whites…so everything you touch here has some form of egg.”“One case of fresh eggs, we were paying $28.42 just six months ago,” he said. “Now it’s $59.80. A 30 pound bucket of frozen eggs is…not even six months ago was $42, now it’s $115.
