NOTE: Adjust oven rack to center position and preheat oven to 325 degrees F. Spread the blanched almonds out on a cookie sheet and lightly toast until golden, about 8 minutes. Let cool, then transfer to a mini food processor or manual nut grinder and pulse or grind until finely chopped. Transfer to a medium bowl and whisk in the flour, baking soda, and salt. Beat the softened butter with the granulated sugar until creamy, about 4 minutes. This can be done either manually or with a standing electric mixer fitted with the paddle attachment. If using the electric mixer, on low speed, add the nut mixture and beat until evenly combined, scraping up the bottom and sides of the bowl once or twice, about 1 minute. Same procedure if mixing manually.Scoop level tablespoons of the dough into balls and gently roll. Arrange balls 1 inch apart and freeze until just firm, about 10 minutes. Bake until lightly golden on top and deeply golden on the bottom, about 20 or 22 minutes.
