Alison Cook's Burger Friday: The 9-Napkin OMG Brisket Burger is born at Katy BBQ joint
Good burgers don’t just happen. Even the humblest are born of many decisions, trials and errors.
All this preoccupied me as I sat at the bar of the month-old Brett’s BBQ Shop location, just south of the Katy Mills outlet complex, as sunset light poured through tall windows. It’s an ambitious step up for the tiny joint that could seat just a few handfuls of diners at their cramped Mason Road original store.I was gnawing cautiously at the towering pile they call the 9-Napkin OMG Brisket Burger, featured on their happy hour and dinner menus only.
Not to mention one adorned by a shaken margarita bursting with just the right note of fresh citrus, and a trio of empanadas fine enough to make the most cynical Argentinean weep.
