It calms me down quite a bit. The more focus something needs, the better it is for me, because it means I’m not thinking about a million different things.

It’s funny to be having this conversation, because actually the last time we grilled together was at Julia’s house, and she had the gas grill going, and she was grilling some zucchini and other vegetables and whatever. And there was also a low fire in a fire pit where I was simultaneously cooking a bunch of seafood for a paella-esque sort of thing.

I want to circle back to something that you mentioned earlier, Julia. It sounds like you’re willing to concede that charcoal or wood-fired offers more in the flavor department than a gas grill, but I’m wondering if you have any strategies for compensating for that reality.I’ve definitely done the thing before where you soak wood chips, wrap them in tin foil, poke a few holes in the package, and let that kind of smolder in one corner of the grill to create more smoke flavor.

I’m definitely a fan of super-simply grilled things—just olive oil and salt on everything before it gets cooked, whether it’s meat, fish, or vegetables. And then when they come off of the grill is when I add lots of herbs, and raw garlic, and lemon, all that kind of stuff. I tend to introduce flavor that way rather than relying on the flavor that the actual grill provides, which is such a big part of what [Elise] does. To me, it’s a method of cooking, not a method of flavoring.

I mean, it sounds like a big part of it for you, Julia, is just being to be able to cook outside, rather than in your kitchen.Yeah, absolutely. And also a big thing for both Elise and I is that we get to cook outside, not only with our wives, but also with our dogs!. Fortunately my dogs are really aware of fire, and know not to get too close to it.
