Christine Ha’s new Blind Goat dishes include brisket fried rice and her MasterChef-winning dessert
Patrick Dao, the Blind Goat's sous chef, plating the whole roasted turmeric fish., as Ha was known on the TV show, is cooking up favorites from the Blind Goat’s first run, but she’s also added and expanded on dishes that often combine her Vietnamese and Texan heritage. Her menu aims to reflect the idea of “nhau,” a Vietnamese word referring to eating and drinking in a casual setting whether in a home, street-side cafe or beach.
There’s a riff on trendy charcuterie boards but with a banh mi, where the popular Vietnamese sandwich is deconstructed with toasted baguette, pate, egg yolk mayo, pickles and more. “Mom’s egg rolls” are on the menu but more creative dishes like a pho bone marrow are also available. “The menu is still what I originally wanted and envisioned,” Ha said. “It was just too ambitious for the food hall. Now it’s finally being realized many years later.”
The Blind Goat is still settling into its space, tweaking recipes and refining its service, Ha said. On a recent visit, these five dishes stood out in telling the next chapter of the MasterChef winner’s latest restaurant.For Ha, who grew up in Texas, queso could be its own food group.This dish accidentally came together. Ha and her team were experimenting with a sate sauce when they were first opening the Blind Goat.
At the Blind Goat, the Velveeta-yellow cheese is served with fried wonton chips, and is a textbook example of silky queso with hints of the ingredients popular in Vietnamese cooking.
