Sunny side up or scrambled?
Like an omelette, a frittata is a great way to whip up a meal just by combining eggs with whatever tasty scraps of vegetables, meat, and cheese you have lying around. Though this one was developed with a quick dinner in mind, it's also a bang-up way to start your Saturday morning.
We reserve some of the fat rendered from crisping the bacon to cook the corn, scallions, and jalapeños, then add them to a combination of eggs, milk or half-and-half, and Gruyère cheese. Keep back half of the cheese, plus a little bacon and a few jalapeño slices, to broil on top of the frittata after the eggs have mostly cooked through.
