To know and love a doctor, nurse, or EMT is to accept that dinner time might often be a very rushed affair. For our first responders right now, "cooking" might be warming up a carton of soup and "dining" might be grabbing a handful of granola before the next shift starts.
But for those times when you do have a few more minutes, we've rounded up some of our team's favorite easy, quick, and nourishing recipes. These are dinners that work well when cooked in a big batch and reheated throughout the week, and they can be easily customized to your pantry's contents. These are the recipes we personally turn to when we're feeling harried, or just don't have the time to luxuriate in slowly cooking.
“This is such a satisfying and delicious dish. Start with store-bought hummus smooshed on a plate, top it with a simple salad and add a jammy egg for protein. Any greens will work for the salad—kale and brussels sprouts are great since they last a long time in the fridge, but it's flexible. No greens on hand? You can also top your hummus with spiced ground meat, a handful of olives, or toasted nuts.
“I could eat this prep-ahead frittata warm out of the oven or cold the next day and be equally happy. It's especially good on a soft roll with a swipe of mayo and a handful of arugula. Consider the potatoes and shallot suggestions, and swap in whatever vegetable you have on hand—even if that's just a couple of drained jars of artichoke hearts and roasted peppers.” —
